Marbled beef breeds

Fat laced through the muscle: Wagyu, Hanwoo and Angus.

Marbled beef has fine streaks of fat running through the muscle, like the veins in marble. It is the main mark of quality in many beef grading systems, and some breeds lay down much more of it than others. The Wagyu of Japan are the extreme case, bred over generations for intramuscular fat. The Hanwoo of Korea and the Aberdeen Angus are also known for marbling. In South Asia, where native cattle are kept for milk and work, marbling plays little part in breeding, and Indian zebu tend to give lean meat.

What marbling is

Marbling is fat laid down between the muscle fibres, rather than as a layer outside the muscle. It forms late in an animal's growth and depends on breed, age, feed and the time spent on a high-energy diet. Many beef grading systems, including those of Japan, the United States, Korea and Australia, score carcasses mainly on the amount and fineness of marbling at a cut between the ribs.

Wagyu and Japanese beef

Wagyu simply means Japanese cattle. There are four Wagyu breeds: Japanese Black, Japanese Brown, Japanese Polled and Japanese Shorthorn. Japanese Black is by far the most common and the most marbled. Many of Japan's regional beef names come from particular Japanese Black lines, raised and finished in particular prefectures. Japan grades beef on a scale for marbling, and Wagyu bred overseas, in Australia and the United States, use similar measures.

Hanwoo, Angus and others

The Hanwoo is the native brown cattle of Korea and was long a working breed before becoming the country's main beef breed. The Aberdeen Angus marbles well for a British breed, which helped make it popular worldwide. Shorthorn and Murray Grey are also known for marbling. Most lean, heavily muscled breeds such as the Belgian Blue marble little, and zebu usually marble less than taurine cattle.
