Best time: April to June, when the dehesa is green.

The dehesa is the oak pasture of western Spain and southern Portugal: wide grassland dotted with holm and cork oaks, grazed by cattle, sheep and pigs. South and west of Salamanca, in the country called the Campo Charro, large estates have raised cattle for centuries. Among them are the ganaderías, ranches that breed the Spanish fighting bull.

Cattle of the dehesa

Native breeds of the western dehesa are hardy, red or black beef cattle that graze outdoors all year and calve on the open pasture. Many herds today cross native cows with Charolais or Limousin bulls. The dehesa itself is a managed landscape, its trees pruned for acorns, firewood and shade, and is often praised as a model of mixed land use.

The fighting bull ranches

Fighting bulls are raised on large estates, living in herds on open pasture for four years or more before being sold. Breeders test young cows for temperament in a small ring, a practice called the tienta. Bullfighting divides opinion in Spain: some see it as art and tradition, others as cruelty, and some regions have restricted it. The ranches also shelter wildlife on their wide, lightly grazed land.

A trail idea for Salamanca and the dehesa

  1. Salamanca The university city of golden sandstone.
  2. Campo Charro Oak pasture south-west of the city, with cattle estates.
  3. Ciudad Rodrigo A walled town in the dehesa near the Portuguese border.
