Highland coo

The Scots name for a Highland cow, the shaggy long-horned breed of the Scottish Highlands.

Long horns that sweep out sideways, as in the Texas Longhorn, which can span more than two metres tip to tip.

Also: Hielan coo, coo, kyloe

Coo is the Scots word for cow, and a Highland coo is a Highland cow, the long-haired, long-horned breed of the Scottish Highlands and Islands. Highland cattle are hardy enough to winter outdoors on rough hill ground, protected by a double coat of long outer hair and a downy undercoat, and the long forelock over the eyes keeps off insects and weather. They come in red, yellow, dun, black, brindle and white. A group of Highland cattle is traditionally called a fold, after the stone shelters where they were once kept at night. Small Highland cattle from the islands were once called kyloes. The breed is widely seen as a symbol of Scotland.
